Walnuts and Butternuts

Ingredients

Directions

  1. Harvest walnuts or butternuts in summer when tender enough to prick with a large needle.

  2. Rub off the outer skin and soak in brine for five days.

  3. Drain and wipe the nuts, then prick each one two or three times with a needle.

  4. Soak the pricked nuts in cold water for half a day.

  5. Prepare a vinegar-pickle with allspice and boil for ten minutes.

  6. Pack the nuts in jars and pour the hot pickle over them.
