Raised Doughnuts, with Butter and Eggs

Ingredients

Directions

  1. In a large bowl, mix 1 quart of flour, salt, brown sugar, cinnamon, mace or nutmeg, and allspice.

  2. Add the creamed butter to the center of the dry ingredients.

  3. Pour the yeast and warm milk over the butter, stirring gradually to form a soft dough.

  4. If the dough is too wet, do not use all the milk.

  5. Cover and let the dough rise overnight.

  6. The next day, mix 1 pint of flour with 1 teaspoon of baking soda.

  7. Beat the egg yolks until frothy, then beat the egg whites until stiff, and combine both.

  8. Stir the risen dough and gently fold in the beaten eggs and flour mixture.

  9. Work quickly to form a true dough, adding more flour if necessary.

  10. Let the dough rise in a warm place until spongy-light, about 2 hours.

  11. Fry the doughnuts as instructed in the previous recipe.
