Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. In a pot, combine milk and rice, and let it gently boil until tender.

  2. Stir in butter, lemon zest, powdered sugar, and vanilla sugar.

  3. Add egg yolks two at a time, mixing well.

  4. If the mixture is too thick, add cream or more milk.

  5. Let the mixture cool in the larder.

  6. Whisk egg whites in a clean bowl until stiff peaks form.

  7. Fold half of the egg whites into the rice mixture, then gently fold in the remaining whites.

  8. Pour the mixture into a pie dish and bake at 350°F (175°C) until set.

  9. Serve hot with fruit sauce if desired.
