Fresh Strawberry Cream

Ingredients

Directions

Prepare the pulp

  1. Pick the strawberries and rub them through a fine sieve to obtain 1 pint of pulp.

  2. If the pulp is less than 1 pint, add enough cream to make it up to 1 pint.

Make the cream

  1. In a three-pint kitchen pan, combine the strawberry pulp, lemon juice, powdered sugar, and fresh cream.

  2. Mix well until the mixture is a good light pink color.

  3. Add more cochineal if necessary.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Strawberries
Provide the main flavour and the pulp that gives the cream its body and colour.
Powdered sugar
Sweetens the cream and dissolves easily into the pulp without grittiness.
Fresh cream
Provides fat for a rich, smooth texture that holds its body.
Lemon juice
Adds acidity that brightens the strawberry flavour and balances the sweetness.

The step that matters

Mix well until the mixture is a good light pink color. Cochineal is added only for colour and is strong, so adding too much turns the cream an unappealing shade. Mixing thoroughly spreads it evenly and avoids streaks, so judge the colour after full blending.

Swap the lemon

How well each one fits the dish's main ingredients (cream, sugar):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better
  4. Lemonthe original

Fit is the average pairing score against cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
