Ingredients

Directions

  1. Cut sponge cake in half lengthwise, then into four pieces.

  2. Layer pieces in a pudding mold, sprinkling with ratifias, cherries, and chopped lemon and orange peel.

  3. Repeat layering until the mold is full.

  4. In a bowl, crack eggs one at a time, checking for freshness, then add to a large pan.

  5. Add powdered sugar and milk to the eggs, and beat well for 2 minutes.

  6. Strain the mixture into another pan, then add grated nutmeg and lemon zest.

  7. Select a stewpan that is 1-2 inches taller than the pudding mold and has a tight-fitting lid.
