Roast Haunch of Lamb

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat oven to 350°F (175°C).

  2. Roast the haunch of lamb for the specified time.

Make the onion sauce

  1. While the lamb roasts, prepare onion sauce by mixing milk, onions, and flour in a saucepan.

  2. Place saucepan over heat, stir until it boils, then let it boil for a couple of minutes.

  3. Stir in butter, salt, and white pepper.

Serve

  1. Once the lamb is done, place a ruffle on the shoulder bone and serve it with gravy underneath and onion sauce in a separate dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Haunch of lamb
Provides the main meat, whose fat renders during roasting to add flavour and juiciness.
Butter
Adds richness and a smooth, rounded flavour to the sauce.

The step that matters

Boiling the onion sauce. Stirring while the sauce comes to the boil prevents lumps and scorching. Boiling for a couple of minutes lets the flour swell and thicken the sauce and cook out its raw starchy taste.

Swap the white pepper

How well each one fits the dish's main ingredients (lamb, butter, onion, sauce):

  1. Garlicfits better
  2. Capersfits better
  3. Parsleyfits better
  4. White pepperthe original

Fit is the average pairing score against lamb, butter, onion, sauce. Candidates are from the same food group and used in at least 100 recipes.
