Why it works: Gelatin and cream match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 1,628 recipes. Both carry acetic acid, which smells sour, vinegar. The science ↓

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Dissolve the gelatin in 400 milliliters of water with 300 grams of sugar over low heat.

  2. Let it cool, then add 100 milliliters of coffee cream.

  3. Line a cylindrical mold with the coffee gelatin mixture.

  4. Prepare a Bavarian cream by replacing vanilla infusion with coffee infusion as per the vanilla Bavarian recipe.

  5. Fold in whipped cream to the Bavarian mixture.

  6. Fill the mold and place it in the freezer for 1.5 hours.

  7. Unmold and serve.
