Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the custard and add richness through emulsifying fats and proteins.
Gelatin
Sets the mixture so it holds its shape when unmolded.
Milk
Forms the liquid base that carries the flavour and gives a creamy body.
Whipped cream
Adds air and fat for a light, smooth texture.
Powdered sugar
Sweetens the custard and helps balance the richness of the yolks.

The step that matters

Strain after adding the gelatin. Straining removes any lumps or bits of cooked egg and gelatin so the set bavarois is smooth. Gelatin must be fully dissolved before it is added to the warm mixture so it sets evenly without strands.
