Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks and whites thicken and enrich the sauce, giving it body and a smooth, rich texture.
Butter
Adds fat for richness and a smooth, silky mouthfeel.
Sugar
Sweetens the sauce and helps give it body as it heats.

The step that matters

Adding the beaten yolks. Egg yolks can scramble if they meet very hot liquid too quickly. Adding them once the mixture is at a boil, as the record directs, and stirring steadily helps keep the sauce smooth rather than curdled.
