Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Melt the butter in a cup and pour the boiling water over it. Set aside.

  2. Mix all dry ingredients in a bowl and sift them together.

  3. Beat the egg until light, then add the milk.

  4. Stir the milk mixture into the dry ingredients.

  5. Add the melted butter and water, and mix well.

  6. Pour the batter into buttered muffin pans.

  7. Bake for 30 minutes in a moderate oven at 350°F (175°C).
