Grape Preserve

Ingredients

Directions

Prepare the fruit

  1. Squeeze the pulp out of the grape skins and place it in a preserving kettle.

  2. Set the kettle on the fire and stir frequently, cooking until the pulp breaks up easily.

  3. Rub the pulp through a sieve to remove the seeds.

  4. Measure the skins and pulp, then return them to the kettle.

Cook and seal

  1. For every quart of fruit, add 1½ pints of sugar and ½ cup of water.

  2. Cook for 20 minutes after the mixture begins to boil.

  3. Pour the preserve into jars and seal.

What each ingredient does

Grapes
Provide the fruit flavour and the pectin-rich pulp and skins that set the jam.
Sugar
Sweetens the jam and helps it set into a thick, spreadable texture.

The step that matters

Cook for 20 minutes after the mixture begins to boil. Sugar and fruit need sustained boiling to thicken; undercooking leaves the jam runny, while overcooking can darken and scorch it.
