What each ingredient does

Potatoes
Form the bulk of the salad and absorb the dressing as they cool and soften.
Egg yolks
Emulsify the oil and water into a thick, creamy dressing that holds together.
Salad oil
Provides fat that, beaten into the yolks, thickens the dressing and adds richness.
Vinegar
Adds acidity that sharpens the dressing and balances the richness of the oil and yolks.
Dry mustard
Adds sharp flavor and helps stabilize the egg yolk emulsion.

The step that matters

Adding the salad oil to the yolks. Oil must be added slowly while beating so the egg yolks can emulsify it. Adding it too fast causes the dressing to split and fail to thicken.

Swap the onion

How well each one fits the dish's main ingredients (potato, parsley, pepper, mustard, egg, vinegar):

  1. Horseradishfits better
  2. Shallotfits better
  3. Chivefits better
  4. Onionthe original

Fit is the average pairing score against potato, parsley, pepper, mustard, egg, vinegar. Candidates are from the same food group and used in at least 100 recipes.
