Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Make the custard
Heat 2 cups of sweet milk to boiling point.
Gradually stir in a little cold milk mixed with 1 tablespoon of corn starch.
Add sugar to taste, 3 beaten eggs, 1 teaspoon of butter, and a little grated nutmeg.
Bring the mixture to a boil.
Bake and serve
Pour into a buttered pudding dish and add 1 cup of pitted stewed prunes.
Bake at 350°F (175°C) for 15 to 20 minutes.
Serve with or without sauce; pour a little cream over it if desired.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Bind the custard and help it set as it bakes.
- Corn starch
- Thickens the milk mixture so the pudding holds its shape.
- Sweet milk
- Forms the liquid base that the eggs and starch set into a custard.
- Stewed prunes
- Add moisture, sweetness and a soft fruity flavour throughout the pudding.
The step that matters
Bring the mixture to a boil. Corn starch only thickens fully once it reaches a boil, so the custard turns thick and glossy. Eggs added after thickening are then gently set in the oven, which avoids curdling the egg proteins.
Swap the nutmeg
How well each one fits the dish's main ingredients (milk, corn, sugar, egg, butter):
- Cinnamonfits better
- Nutmegthe original
- Gingerfits less well
- Tarragonfits less well
Fit is the average pairing score against milk, corn, sugar, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
