Chocolate Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the cake

  1. Preheat the oven to 350°F (175°C).

  2. Cream together the powdered sugar and butter.

  3. Add the milk, flour, eggs, baking soda, and cream of tartar; mix well.

  4. Pour the batter into a greased cake pan and bake until a toothpick comes out clean.

Make the filling and assemble

  1. For the filling, mix the chocolate, sweet milk, and corn starch in a saucepan.

  2. Boil for 2 minutes, then remove from heat and stir in the vanilla.

  3. Sweeten to taste and spread thickly between the layers of cake.

What each ingredient does

Eggs
Bind the batter and add structure as the cake bakes and sets.
Butter
Adds fat and tenderness to the crumb and richness to the batter.
Baking soda
Reacts with the acidic cream of tartar to produce gas that helps the cake rise.
Cream of tartar
Acidifies the batter so baking soda can react and lift the cake.
Corn starch
Thickens the chocolate filling as it boils.
Chocolate
Gives the filling its chocolate flavor and body.

The step that matters

Boil the filling before removing it from heat. Cornstarch only thickens fully when it reaches a boil and its starch granules swell. Stopping early leaves a thin filling that will not hold between the cake layers.
