Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Preheat oven to 350°F (175°C).

  2. Beat sugar and egg yolks until very frothy.

  3. Add grated lemon rind and juice, mixing well.

  4. Beat egg whites until very stiff.

  5. Gently fold egg whites into yolk mixture.

  6. Stir in sifted flour carefully, being careful not to overmix.

Bake and serve

  1. Butter a high-shaped mold and pour batter into it.

  2. Bake for about 30 minutes, or until a toothpick comes out clean.

  3. Turn pudding out onto a serving dish and top with frosting.

  4. Serve with rich wine sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped to stiff peaks, they trap air and give the pudding its light, airy structure.
Egg yolks
Add richness and help set the batter as it bakes into a tender crumb.
Flour
Provides the structure that holds the risen batter together as it bakes.
Fine white sugar
Sweetens the batter and, beaten with the yolks, helps create a frothy, stable base.
Lemon juice and rind
Add acidity and bright lemon aroma that balance the sweetness.

The step that matters

Folding in the egg whites. Whipped whites hold the air that lightens the pudding. Folding gently preserves that air, while overmixing or stirring vigorously deflates it and produces a dense result.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, egg, flour, butter, wine, sauce):

  1. Raisinfits better
  2. Vanillafits better
  3. Lemonthe original
  4. Figfits about as well

Fit is the average pairing score against sugar, egg, flour, butter, wine, sauce. Candidates are from the same food group and used in at least 100 recipes.
