What each ingredient does

Raspberry juice
Provides the main fruit flavour and the liquid that reduces into the jam.
Sugar
Sweetens the jam and, as it concentrates, helps it thicken and keep.

The step that matters

Boiling the mixture. Boiling must be long enough to drive off water and concentrate the sugar and fruit pectin so the jam sets. Stirring frequently prevents the sugar from scorching on the bottom of the kettle.
