Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flavor and bulk of the filling.
Butter
Adds richness and fat to the filling, carrying flavor.
Flour
Cooked with butter to thicken the cream into a binding base.
Cream
Adds moisture and softness, helping the filling set smooth.
Egg yolks
Bind the filling and help it set firm when cooked.

The step that matters

Letting the mixture cool before forming. A warm, loose filling will not hold its shape, so the croquettes may slump or burst. Chilling firms the starch and fat so they keep their form through frying.

Swap the parsley

How well each one fits the dish's main ingredients (oyster, cream, butter, egg, flour, pepper):

  1. Nutmegfits better
  2. Parsleythe original
  3. Capersfits about as well
  4. Tarragonfits about as well

Fit is the average pairing score against oyster, cream, butter, egg, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
