Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide starch and bulk, giving the balls a soft, tender interior.
Codfish
Supplies the main flavour and savoury body of the mixture.
Eggs
Bind the mixture together so the balls hold their shape while frying.
Butter
Adds richness and moisture to the mashed mixture.

The step that matters

Frying in hot oil. The oil must be boiling before the mixture goes in. A hot oil surface sets the outside quickly, so the balls brown without soaking up grease or falling apart.
