Almond Cream Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the cake

  1. Preheat the oven to 350°F (175°C).

  2. Cream the butter and sugar together until light and fluffy.

  3. Add the milk and mix well.

  4. Gradually add the flour and baking powder, mixing until smooth.

  5. In a separate bowl, beat the egg whites until stiff peaks form, then fold them into the batter.

  6. Divide the batter into layers and bake until golden brown.

Make the almond custard

  1. For the filling, combine 1 pint of milk, ¾ cup sugar, 2 eggs, and 3 tablespoons corn starch in a custard kettle.

  2. Cook over medium heat until thick, stirring constantly, then flavor with vanilla.

  3. Chop ¾ of the almonds very fine and stir them into the custard.

  4. Blanch and split the remaining almonds for decoration.

Assemble and serve

  1. Once the layers are cooled, fill and frost the cake with the almond custard and top with the split almonds.

What each ingredient does

Eggs
Whites beaten to stiff peaks add lift and an airy crumb to the batter.
Flour
Provides the structure that holds the cake's layers together as they bake.
Butter
Creamed with sugar, it traps air and adds richness and tender texture.
Sugar
Sweetens the cake and, creamed with butter, helps create a light, fluffy texture.
Corn starch
Thickens the custard filling so it sets smooth and spreadable.
Almonds
Finely chopped nuts add nutty flavor and body to the custard filling.

The step that matters

Cook the custard until thick. Corn starch thickens only when the custard is cooked and stirred constantly over medium heat; undercooked custard stays runny and will not hold between the layers.
