What each ingredient does

Gelatine
Sets the liquid peach mixture into a firm, sliceable cream as it cools.
Cream
Adds richness and a light, airy texture when whipped and folded in.
Canned peaches
Provide the main fruit flavor and moisture for the cream.
Sugar
Sweetens the peach base and balances its acidity.

The step that matters

Add the gelatin to the hot peaches and remove from heat immediately. Gelatin must be fully dissolved and evenly mixed into the hot base. Overheating can weaken its setting power, and cooling too early can leave it lumpy or unevenly set.
