Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a mixing bowl, beat the egg whites with a pinch of salt until foamy.

  3. Add the cream of tartar and continue beating until soft peaks form.

  4. Gradually add the granulated sugar while beating until stiff peaks form.

Make and bake the cake

  1. Gently fold in the flour and lemon juice until just combined.

  2. Pour the batter into an ungreased tube pan.

  3. Bake for 40 minutes or until the cake is golden and springs back when touched.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into foam that gives the cake its light, airy structure.
Granulated sugar
Stabilizes the whipped whites and adds sweetness to the cake.
All-purpose flour
Provides light structure so the cake holds its shape as it sets.
Cream of tartar
Acidifies the egg whites, helping them whip to a stable, stiff foam.

The step that matters

Folding in the flour and lemon juice. Folding gently keeps the air beaten into the egg whites. Overmixing deflates the foam, so the cake bakes up dense instead of light and springy.
