To Roast a Turkey
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare
Rub the turkey inside and outside with salt.
In a bowl, mix crushed crackers with oysters and butter using a fork to avoid breaking the oysters.
Fill the turkey with the oyster and cracker mixture and sew it up.
Wrap the turkey tightly with strips of clean muslin.
Roast
Place the wrapped turkey in a roasting pan with some water.
Roast in the oven for two or more hours at 350°F (175°C).
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

What each ingredient does
- Turkey
- Forms the main body of the dish and carries the stuffing as it cooks.
- Oysters
- Add briny, savory flavor and moisture to the stuffing.
- Crackers
- Crushed crackers soak up juices and give the stuffing body and structure.
- Butter
- Adds fat for richness and helps the stuffing brown and taste rounded.
The step that matters
Using a fork to mix the oysters. Oysters are delicate, and stirring them roughly breaks them apart, which spreads their liquor unevenly and makes the stuffing mushy. Gently folding them with a fork keeps the pieces whole and the texture even.
