Why it works: Wheat and corn match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 465 recipes. Both carry hexanal, which smells green, grassy. The science ↓

Artificial Coffee

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, combine wheat bran, corn meal, and baking molasses.

  3. Add enough water to dampen the mixture.

Bake

  1. Spread the mixture in a baking dish and bake, stirring frequently, until browned.

  2. Remove from the oven and mix in the egg thoroughly.

Serve

  1. To serve, combine 2 parts artificial coffee with 1 part regular coffee and add cream to taste.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Wheat bran
Forms the bulk of the base and gives the roasted mixture its body and texture.
Baking molasses
Adds sweetness and helps the mixture brown as it bakes.
Corn meal
Adds coarser texture and body to the roasted base.
Egg
Binds the roasted mixture together once it is removed from the oven.
Artificial coffee
Provides the main coffee flavour in the brewed drink.

The step that matters

Bake, stirring frequently, until browned. Dry heat browns the sugars in the molasses and roasts the bran. Stirring often promotes even browning and prevents scorched patches, which would make the flavour bitter.
