Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Marshmallows
Melt to form a sweet, sticky base that holds the filling together.
Egg whites
Whipped to stiff foam, they add lightness and structure to the filling.
Lemon juice
Adds acidity that balances the marshmallow sweetness and helps stabilise the whipped whites.

The step that matters

Heating the remaining marshmallows. Marshmallows swell and soften with gentle heat, but browning means the sugars have caramelised too far. Watching them closely keeps them pale and soft for the topping.

Swap the vanilla

How well each one fits the dish's main ingredients (egg, lemon):

  1. Orangefits better
  2. Limefits better
  3. Raspberryfits better
  4. Vanillathe original

Fit is the average pairing score against egg, lemon. Candidates are from the same food group and used in at least 100 recipes.
