What each ingredient does

Very young peas
Forms the bulk of each jar and supplies the tender texture and sweet flavor.

The step that matters

Keep the inside of the tops untouched when removing them from the kettle. The sterilized inside surfaces can be recontaminated by a hand or utensil, and microbes left in the jar can cause spoilage later.
