Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Garlic bulbs
Provide the main flavour and, once cooked and pureed, the body of the dish.
Butter
Adds richness and a smooth, silky texture to the puree.
Reduced espagnole sauce
Adds depth and body to the puree as a concentrated sauce base.

The step that matters

Rub the seasoned puree through a fine sieve. Pressing cooked garlic through a fine sieve breaks down fibres and removes skins and lumps, which gives the smooth texture the puree depends on. Skipping or rushing this leaves a coarse, grainy result.

Swap the garlic

How well each one fits the dish's main ingredients (butter, pepper, sauce):

  1. Parsleyfits better
  2. Tarragonfits better
  3. Capersfits better
  4. Garlicthe original

Fit is the average pairing score against butter, pepper, sauce. Candidates are from the same food group and used in at least 100 recipes.
