Why it works: Cinnamon and apple are a kitchen classic. They rank in the top 4% of all ingredient pairs, and cooks put them together in 5,598 recipes. Both carry methyl cinnamate, which smells strawberry. The science ↓
Duling Apple Dumpling
Ingredients
Directions
The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Sift the flour, baking powder, and salt together.
Work in the melted butter and lard until combined.
Add milk gradually to form a dough.
Roll out the dough on a floured surface to ½ inch thick.
Brush the dough with melted butter and sprinkle with brown sugar and cinnamon.
Cover the dough with chopped apples.
Roll the dough up like a jelly roll and cut into 12 equal slices.
Place the slices upright in a buttered pan.
Pour sauce over the slices and bake at 400°F (200°C) for 25 minutes.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
