Why it works: Cream and sugar are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 43,450 recipes. Both carry 2,3-butanedione, which smells butter, sweet. The science ↓
Ice Cream
Ingredients
Directions
Prepare the base
Pour the cream into a broad pan and gradually stir in the sugar until well mixed.
Strain the mixture through a sieve into a tin with a close cover.
Freeze
Place the tin in a tub filled with small pieces of ice and a large quantity of salt, ensuring no salt enters the cream.
As the cream freezes around the edges, scrape it down with a spoon.
While freezing, gradually stir in the lemon juice or mashed fruit.
For almond flavor, beat the almonds with a little rose-water to a smooth paste and stir in while freezing.
Serve
Once frozen, dip the tin in lukewarm water to remove the cream.
Serve immediately or pour into moulds and set in a tub of ice and salt.
Before serving from moulds, wipe off the salt, dip in lukewarm water, and turn out the cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Rich cream
- Provides the fat that makes the frozen cream rich and smooth.
- Powdered loaf sugar
- Sweetens the cream and lowers its freezing point so it stays soft enough to scrape.
- Lemon juice or mashed strawberries or raspberries
- Adds acidity and fruit flavor to the cream.
- Sweet almonds
- Add nutty flavor and body when beaten into a paste.
The step that matters
Scraping the cream as it freezes. Freezing cream forms ice crystals at the edges first. Scraping them back into the mixture keeps crystals small, so the result stays smooth rather than icy.
