Why it works: Celery and pepper match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 16,012 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓
Chicken Salad
Ingredients
Directions
Cook the chicken
Boil the fowl in salted water until tender.
Let it cool.
Remove the skin, bones, and dark meat, reserving the second joint and all the white meat.
Cut the white meat into pieces the size of dice or small chestnuts.
Chop the celery into pieces, using about two-thirds the volume of chicken.
Make and dress the salad
In a bowl, mix the vinegar, salt, and cayenne until dissolved.
Pour the mixture over the chicken and celery, mixing thoroughly.
Taste and adjust seasoning with more salt or cayenne if needed.
Add half of the dressing to the salad and mix well.
Transfer the salad to a serving dish and pour the remaining dressing on top.
Garnish with tender leaves of celery or lettuce.

What each ingredient does
- Fowl
- Provides the cooked meat that forms the body of the salad.
- Celery
- Adds crisp texture and a fresh, crunchy contrast to the soft chicken.
- Vinegar
- Adds acidity that brightens the flavor of the chicken and celery.
The step that matters
Taste and adjust seasoning before serving. Chicken and celery absorb salt and acid unevenly once mixed, and cold foods taste less salty, so tasting after dressing lets the cook correct the balance before the salad is served.
Swap the celery
How well each one fits the dish's main ingredients (vinegar, pepper):
- Tarragonfits better
- Dillfits better
- Parsleyfits better
- Celerythe original
Fit is the average pairing score against vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
