Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salmon
Provides the main protein and flavor, binding with the potato into a shapeable mixture.
Irish potatoes
Supply starch and bulk that hold the cakes together and keep them moist inside.
Eggs
Bind the mixture so the cakes hold their shape while frying.
Butter
Adds richness and flavor, and helps the cakes brown in the pan.

The step that matters

Frying the cakes. Cooking over medium heat lets the outside brown to golden while the inside heats through. Too high a heat can scorch the surface before the centre is hot, and cakes that are not firm may break apart in the pan.

Swap the potato

How well each one fits the dish's main ingredients (salmon, egg, butter, pepper):

  1. Asparagusfits better
  2. Chivefits better
  3. Capsicumfits about as well
  4. Potatothe original

Fit is the average pairing score against salmon, egg, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
