Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the salad and hold their shape when boiled until tender.
Egg yolks
Thicken the dressing as they cook, giving it a creamy, smooth body.
Vinegar
Adds acidity that brightens the dressing and balances the sweetness and richness.
Sugar
Balances the sharpness of the vinegar and mustard in the dressing.
Ground mustard
Adds sharp, pungent flavour that gives the dressing its character.

The step that matters

Cook the dressing slowly until it thickens. Egg yolks thicken through gentle heat; if cooked too fast they can overheat and scramble, leaving a lumpy dressing instead of a smooth, creamy one.
