What each ingredient does

Beets
Form the main body of the dish and absorb the sweet-sour pickling syrup as they sit.
Vinegar
Provides the sharp acidity that gives the pickle its tang and helps preserve the beets.
Sugar
Balances the vinegar's sourness with sweetness in the pickling syrup.
Ground cloves
Adds warm, aromatic spice flavor to the pickling syrup.

The step that matters

Pour the boiling syrup over the beets. The syrup must be fully boiling so it is hot enough to penetrate the beets and dissolve the sugar evenly. Cooled syrup pickles unevenly and may not preserve the beets as well.

Swap the clove

How well each one fits the dish's main ingredients (vinegar, sugar):

  1. Cinnamonfits better
  2. Tarragonfits better
  3. Peppermintfits better
  4. Clovethe original

Fit is the average pairing score against vinegar, sugar. Candidates are from the same food group and used in at least 100 recipes.
