What each ingredient does

Beets
Form the edible cups and provide the earthy body of the salad.
Celery
Adds crisp texture to the filling.
Cucumber
Adds cool, crisp moisture to the filling.
French dressing
Flavors the beets and moistens the salad, adding acidity and fat.

The step that matters

Scoop out the center, leaving ¼ inch thick sides. Beets are sturdy when cooked until tender, but thin walls can tear during scooping. Leaving sides about ¼ inch thick keeps the cups intact to hold the filling.
