What each ingredient does

Cream
Whisked into a froth to form the light, airy body of the dish.
White wine
Adds acidity and a bright flavour that cuts the richness of the cream.
Naples biscuits
Soak up the wine and cream, giving the layers a soft, cake-like texture.
Red currant jelly
Adds sweetness and a tart fruit flavour between the layers.

The step that matters

Whisking the cream to a froth. Cream must be whisked just until it holds a stable foam. Over-whisking turns it grainy and buttery, while under-whisking leaves a runny layer that will not hold its shape in the dish.

Swap the red currant

How well each one fits the dish's main ingredients (cream, white wine, lemon, biscuit, orange):

  2. Raspberryfits better
