Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ripe elderberries
Provide the main fruit flavour and colour of the ketchup.
Vinegar
Extracts the fruit and adds sharp acidity that keeps the ketchup stable.
Anchovies
Dissolve during boiling to add savoury depth and salty umami.
Shallots
Add a mild onion-like sweetness and aromatic background flavour.

The step that matters

Boil until the anchovies dissolve. Anchovies must fully break down into the liquid so the ketchup is smooth and evenly seasoned. Stopping early leaves whole pieces and uneven savoury flavour.

Swap the mace

How well each one fits the dish's main ingredients (vinegar, shallot, clove, nutmeg, ginger):

  1. Cinnamonfits better
  2. Allspicefits better
  3. Cardamomfits better
  4. Macethe original

Fit is the average pairing score against vinegar, shallot, clove, nutmeg, ginger. Candidates are from the same food group and used in at least 100 recipes.
