Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Sets the cream into a light, wobbly structure as it cools.
Cream
Provides richness and the smooth, velvety body of the dessert.
Pounded sugar
Sweetens the cream and balances the sharpness of the lemon and jelly.
Jelly
Adds fruity flavour and a contrasting layer beneath and on top of the cream.

The step that matters

Boil for 4-5 minutes, then strain and let cool. Isinglass is a gelatin-like protein that must be fully dissolved before the mixture sets. Boiling briefly ensures it disperses evenly through the cream, and straining removes any lumps or undissolved bits so the set is smooth.

Swap the lemon

How well each one fits the dish's main ingredients (milk, sugar, cream, apricot):
