Chocolate Cream

Ingredients

Directions

Make the custard

  1. Scrape the chocolate very fine and mix it with the egg yolks and powdered sugar.

  2. Stir or beat the mixture until well combined, then gradually add the cream.

  3. Pour the mixture into a saucepan and stir until it thickens enough to stick to a spatula.

  4. If boiling the cream on an open fire, remove the pan as soon as it begins to stick to the spatula.

Chill and serve

  1. Add the lemon zest after boiling, and strain the mixture through a fine sieve before freezing.

  2. Transfer the contents to an earthen dish or ice cream maker and place it in a very cold area.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the mixture as they set with heat, giving the cream a rich, smooth body.
Cream
Adds fat and richness, giving the chilled dessert a smooth, creamy texture.
Chocolate
Provides the main flavor and color of the cream.
Powdered sugar
Sweetens the mixture and dissolves smoothly into the yolks and cream.

The step that matters

Remove the pan as soon as the mixture sticks to the spatula. Egg yolks thicken with heat but can curdle or scramble if overheated. Pulling the pan off at the first sign of thickening keeps the custard smooth.

Swap the lemon

How well each one fits the dish's main ingredients (cream, sugar, egg, chocolate):

  1. Vanillafits better
  2. Raspberryfits better
  3. Coconutfits better
  4. Lemonthe original

Fit is the average pairing score against cream, sugar, egg, chocolate. Candidates are from the same food group and used in at least 100 recipes.
