Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Provide the main flavor and sweetness as they cook slowly in butter.
Flour
Thickens the onion mixture so it helps give the soup body.
Milk
Forms the liquid base of the soup.
Egg yolks
Enrich the soup and add thickness and richness when gently heated.
Cream
Adds richness and a smooth, velvety texture.
Butter
Adds fat and carries the onion flavor during the initial cooking.

The step that matters

Stirring the egg yolk and cream into the soup. Egg yolks can curdle or scramble if they get too hot. Keep the soup at a gentle heat and stir constantly while cooking the final 3 minutes so the yolks thicken it smoothly.
