Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Round clams
Provide the main body of the stew, releasing their briny broth as they cook.
Flour
Thickens the gravy when stirred into melted butter and cooked.
Butter
Melts into the flour to form a roux and adds richness to the gravy.
Milk
Forms the creamy base of the stew, adding richness and softness.

The step that matters

Boil the clams slowly until tender. Boiling too hard toughens clam meat and can make it rubbery, so a gentle simmer keeps it tender while the broth develops flavor.

Swap the white pepper

How well each one fits the dish's main ingredients (clam, flour, butter, milk):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Jalapenofits better
  4. White pepperthe original
