Veal Stew

Ingredients

Directions

Prepare the stew

  1. Wash the veal pieces and place them in a stew pan with 2 quarts of water.

  2. Bring to a boil and skim off any scum.

  3. Add salt, pepper, and a small piece of butter to the meat.

  4. Add the halved potatoes to the stew pan.

Make and cook the dumplings

  1. In a bowl, mix the eggs, cream or milk, a little salt, and enough flour to make a batter thicker than pancake batter.

  2. Drop spoonfuls of the batter into the boiling stew.

  3. Cover the pan tightly to prevent steam from escaping and let it boil for 20 minutes.

Serve

  1. Serve in a deep dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the meat that becomes tender and flavourful as it simmers in the broth.
Potatoes
Hold their shape and add starch that thickens the stew slightly as they cook.
Eggs
Bind the batter so the spoonfuls set into firm dumplings in the simmering liquid.
Flour
Thickens the batter and gives the dumplings structure as they cook.
Cream or milk
Adds moisture and richness to the batter, keeping the dumplings tender.

The step that matters

Drop the batter into the boiling stew. The stew must be at a full boil and the batter must be thick, not runny. Thick batter holds its shape and sets quickly in the hot liquid, while thin batter disperses and clouds the broth. Keeping the lid tight traps steam so the dumplings cook through.

Swap the potato

How well each one fits the dish's main ingredients (veal, pepper, butter, egg, cream, flour):
