Calf's Liver and Bacon

Ingredients

Directions

Prepare the liver

  1. Pour hot water over the liver slices and let sit for a few minutes to remove blood. Then dry with a cloth.

Cook the bacon and liver

  1. Cut bacon into thin slices equal to the number of liver slices, and fry until crisp. Keep warm.

  2. Season the liver with pepper and salt, dredge in flour, and fry in the bacon fat until nicely browned.

  3. Serve each slice of liver topped with a slice of bacon.

Make the gravy

  1. For gravy, pour off most fat from the pan, add butter and flour, mix well, then add water, salt, and pepper. Bring to a boil and serve in a gravy boat.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's liver
Provides the main meat, cooked quickly so it browns outside and stays tender inside.
Bacon
Adds salty, savoury fat that is rendered for frying the liver and crisped as a topping.
Flour
Dredging coats the liver so it browns well, and it thickens the gravy.
Butter
Adds richness and flavour to the gravy and helps form its roux base.

The step that matters

Frying the liver in bacon fat. Liver cooks fast and turns dry and grainy if overcooked. Hot fat browns the floured surface quickly, so the inside stays tender.
