Peach Meringue

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Pare and quarter the peaches, removing the stones.

  2. Place the peaches in an oven-safe dish and sprinkle with sugar.

  3. Cover the peaches with beaten egg whites.

  4. Bake in a 400°F (200°C) oven until the egg whites are a delicate brown.

  5. Remove and cool, then refrigerate or place in a cool area.

  6. In a saucepan, combine the egg yolks, milk, sugar, and flavoring.

  7. Cook gently, stirring, until thickened, being careful not to curdle the eggs.

  8. Cool and serve the custard with the meringue.
