Preserved Peaches

Ingredients

Directions

Prepare the peaches

  1. Select ripe but firm peaches and cut them in half, removing the stones and peeling them.

  2. For each pound of peaches, use an equal amount of white sugar and a teacup of water; stir until dissolved.

Cook

  1. Heat the mixture over moderate heat until boiling, then add the peaches.

  2. Boil gently until the peaches are clear, turning them with a slotted spoon several times.

  3. Once clear, remove the peaches with a spoon and place them on flat dishes to cool.

  4. Boil the syrup until thick, then pour it into a large pitcher to cool and settle.

Jar

  1. Once the peaches are cold, carefully place them in jars and pour the syrup over them, leaving any sediment behind or straining the syrup.

What each ingredient does

Peaches
Provide the fruit that softens and turns clear in the sugar syrup, forming the preserve.
White sugar
Dissolves into the water to form the syrup, sweetening the fruit and helping it keep.
Water
Dissolves the sugar into a syrup that the peaches cook in.

The step that matters

Boil gently until the peaches are clear. Vigorous boiling can break the fruit apart and make it mushy, while gentle heat lets the peaches soften and the syrup penetrate slowly so they hold their shape.
