Why it works: Raspberry and sugar are a kitchen classic. They rank in the top 21% of all ingredient pairs, and cooks put them together in 3,101 recipes. Both carry 2,3-butanedione, which smells butter, sweet. The science ↓

Strain the juice through a fine sieve or cloth.
Make the jelly
Measure the juice and add 1 pound of sugar for every pint of juice.
Combine the juice and sugar in a preserving pan and boil gently until the jelly thickens.
To test, pour a little on a plate.
Remove any scum that rises.
Pot and store

What each ingredient does
- Raspberry juice
- Provides the main flavour and liquid that the jelly is built from.
- White sugar
- Helps the jelly set and thicken while adding sweetness and preserving the jelly.
The step that matters
Boiling until the jelly thickens. Sugar and pectin in the fruit juice set only when enough water has evaporated and the mixture reaches a suitable concentration. Undercooking leaves a runny jelly, while overcooking can make it stiff or caramelised. Testing a spoonful on a cold plate helps judge when it is ready.
