Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Cream together the sugar and butter.

  2. Add the beaten egg yolks, milk, and baking soda; mix well.

  3. In a separate bowl, beat the egg whites until stiff peaks form.

  5. Gradually stir in the flour until just combined.

Bake

  1. Pour the batter into a greased cake pan.

  2. Bake at 350°F (175°C) for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks add richness and emulsify the batter; whites whipped to stiff peaks lighten the crumb.
All-purpose flour
Forms the gluten network that gives the cake its structure.
Butter
Adds fat for tender texture and flavor.
Sugar
Sweetens the cake and helps tenderize its crumb while creaming with butter.
Baking soda
Reacts with the acidic components to produce gas that helps the cake rise.

The step that matters

Fold in the beaten egg whites. Folding gently keeps the air trapped in the whipped whites. Stirring vigorously would deflate the batter and produce a denser cake.
