Pickled Cauliflowers

Ingredients

Directions

Prepare

  1. Separate the cauliflower into small pieces and soak overnight in a mixture of salt and water.

  2. In the morning, drain the water and boil the cauliflower for about 5 minutes.

What each ingredient does

Cauliflower
Forms the crisp, pickled vegetable base of the dish.
Coarse sea salt
Draws water out of the cauliflower during the overnight soak, firming its texture.
Vinegar
Acidic liquid that preserves the cauliflower and gives it its sharp, pickled flavour.
Mixed spice
Adds warm, aromatic flavour that infuses into the pickling liquid and vegetables.

The step that matters

Overnight soak in salt water. Salt draws water out of the cauliflower through osmosis, so it stays firm rather than soft once packed and covered with vinegar. Skipping or shortening the soak leaves the pickle watery and limp.

Swap the onion

How well each one fits the dish's main ingredients (cauliflower, vinegar):

  1. Cucumberfits better
  2. Radishfits better
  3. Mustardfits better
