Why it works: Celery and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 6,810 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓
Black Bean Soup
Ingredients
Directions
Prepare the beans
Soak the black beans overnight, then drain.
Add the beans to a pot with the celery root, bay leaf, peppercorns, clove, parsley, and onion tied in cheesecloth.
Cover with cold water and boil slowly until tender, adding water as needed.
Make the soup
Once soft, remove the seasonings and pass the beans through a sieve, mashing them with a spoon.
Add the soup stock to the mashed beans.
Melt the butter in a pan, stir in flour, and gradually mix into the stock.
Season with salt and pepper.
Serve
In a tureen, add sherry wine, a thin slice of lemon, egg balls, and diced egg white just before serving.

What each ingredient does
- Black beans
- Form the body of the soup once softened and sieved into a purée.
- Soup stock
- Provides the liquid that thins the mashed beans into a soup.
- Butter
- Enriches the flavor and richness of the soup as it is melted with flour.
- Flour
- Thickens the stock, giving the soup a smoother, heavier body.
- Sherry wine
- Adds acidity and aromatic depth when added to the tureen.
The step that matters
Thickening the stock with flour and butter. Flour must be cooked briefly in the melted butter and added to the stock gradually, otherwise it clumps and leaves lumps instead of a smooth, evenly thickened soup.
