  2. Melt the butter in a pan, then stir in the flour, salt, and pepper.

  3. Add this mixture to the hot milk and cook for 10 minutes.

  4. Stir in the beaten egg yolks and cream, cooking for an additional 5 minutes.

Prepare and add the mushrooms

What each ingredient does

Milk
Forms the liquid base of the soup and carries the other flavors.
Flour
Thickens the milk into a smooth, body-rich soup as it cooks.
Butter
Adds fat and richness and carries flavor when cooked with the flour.
Egg yolks
Add richness and thicken the soup gently when heated.
Cream
Adds fat and a smooth, rich texture to the finished soup.
Mushrooms
Provide the main earthy flavor and bulk of the soup.

The step that matters

Stirring in the egg yolks and cream. Egg yolks thicken through gentle heat and can scramble if the soup is too hot or boils. Keep the heat moderate and stir constantly so the custard-like base stays smooth.
