Why it works: Rhubarb and cinnamon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 279 recipes. Both carry methyl cinnamate, which smells strawberry. The science ↓

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. If the rhubarb is very young and tender, do not peel it. If the skin is tough, peel it.

  2. Line a pie plate with the crust.

Assemble the pie

  1. Fill the crust with the rhubarb pieces.

  2. Sprinkle the sugar and add the butter on top.

  3. If desired, add cinnamon or nutmeg for flavor.

  4. Cover with another crust and crimp the edges.

Bake

  1. Bake in a 400°F (200°C) oven for about 30 minutes.

What each ingredient does

Rhubarb
Provides the tart flavor and the bulk of the filling, which softens as it bakes.
Sugar
Sweetens the tart rhubarb and helps draw out juices as the filling cooks.
Butter
Adds richness and a little fat to the filling.
