Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Mix together the meal, flour, coarse sea salt, and baking soda.

  2. Add the beaten egg and half of the sweet milk.

  3. Add all of the sour milk.

Bake

  1. Melt the butter in a 400°F (200°C) pan.

  2. Pour half of the mixture into the pan.

  3. Pour the remaining mixture on top without stirring.

  4. Bake for 20 minutes at 400°F (200°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Baking soda
Reacts with the sour milk's acidity to produce gas that lifts the bread.
Sour milk
Its acidity activates the baking soda, helping the bread rise and giving a tender crumb.
Egg
Binds the batter and adds structure as the bread sets.
Butter
Adds fat for richness and helps the bottom brown in the hot pan.

The step that matters

Pour the remaining mixture on top without stirring. Stirring knocks out the gas bubbles created by the baking soda and sour milk reaction, so the bread will rise less and turn out denser.
